In a unique exploration of food and wine, J Vineyards’ Shifting the Lens invites chefs with diverse backgrounds to showcase cuisines and perspectives that are rarely represented in wine country tasting experiences. In this HWFE exclusive, James Beard Award nominee, Top Chef contestant and a San Francisco Chronicle “Rising Star Chef,” Chef Tu David Phu brings a personal take on Vietnamese cuisine to the table. Chef Phu’s menu was inspired by his own cultural and experiential journey. An Oakland-born, first-generation Vietnamese-American, Chef Phu finds that food is a vessel for meaningful work that can ultimately connect people on a personal, familial and human level. For Shifting the Lens, he built these connections with guests, leaving them with new insights into the importance of representation and how it shapes our culture.
